Keto Chocolate Pudding

I made chocolate pudding last weekend when a craving hit. Luckily I had all the ingredients so I headed out to my in-laws house to do my laundry and cook in their wonderful kitchen. I’ve made this recipe many times, it’s super rich and dark pudding. It’s perfect if you’re having a chocolate craving! This recipe is super easy to double or triple so you can make it ahead and have pudding all week. Trust me, this pudding is way better than the stuff you made from the box, and don’t get me started on the stuff in the plastic container…..

Keto Chocolate Pudding
Makes 6 servings

  • 1/2 cup unsweetened almond milk
  • 1/2 cup whipping cream
  • 1/4 cup Swerve sweetener
  • 1/4 tsp vanilla extract
  • 2 egg yolks
  • 1/2 tsp cornstarch
  • 1/8 tsp xanthan gum
  • 2 tbsp cocoa powder
  • 1 oz unsweetened Baker’s chocolate, chopped
  • 1 1/2 tbsp butter in 3 pieces

In a medium saucepan over medium heat, combine almond milk, whipping cream, vanilla and sweetener. Bring to a simmer, stirring to dissolve the Swerve.

In your stand mixer or bowl, whisk egg yolks until smooth then add the 1/2 tsp of cornstarch (this starch will protect the proteins in the eggs from scrambling when you add the hot cream mixture). Slowly whiskΒ the hot cream mixture into the yolks, the starch should protect them but still use some caution. Next pour the mixture back into the saucepan on the stove.

Reduce heat to medium low and sprinkle surface with xanthan gum, whisking vigorously to combine, make sure you get all of the xantham gum lumps. Whisk in cocoa powder and cook until thickened, this will not take much time, cook about 2 minutes.

Remove from heat and stir in chopped chopped chocolate and butter until smooth. Once the chocolate and butter are melted place wire strainer over a large bowl and pour pudding through the strainer to get out all of the lumps. There will be some left over cocoa powder and starch lumps that will get caught. Now pour into indivdual containers are just a big ol bowl and cover with plastic. Let chill for at least 2 hours and enjoy! I like to top mine with some freshly whipped cream and a little cinnamon.
